Improve archetype-lambda

Motivation and Context

Improve archetype-lambda. Fix #6115

Modifications

Various improvements:

• use Java 25
• use platform specific AWS CRT dependency
• bump dependency version
• improve README

Testing

Updated local tests and did manual end-to-end tests on Lambda
