`--log-level` isn't documented in documentation for flags

I was expecting to find --log-level in this link while revisiting pages for tldr

Transferred this to the Doc repo, but keep in mind that the section you linked to is not about documenting all nu launch flags - It's only providing some examples of flags that impact the Launch Stages mentioned immediately before that.

Would you happen to know a link that would document all the launch flags?

There isn't one that I can think of. Definitely something that could be added. While it could go in the Configuration chapter, I think the (Not so) Advanced might also be a good spot, as that serves as an "appendix" of sorts.
